Panzanella

This classic Italian bread and tomato salad manages to be fresh and summery, but still hearty enough to eat as a light supper or lunch. Traditional panzanella, also called panmolle, is made with stale bread, ripe meaty tomatoes, cucumbers and a vinaigrette made from olive oil and ride wine vinegar.
